Nourishing Food for Pregnancy: Tomatoes and Mozz
During pregnancy, regular snacking is essential—especially if we are busy chasing other children, working long hours, or going through some other significant stress. 4-5 snacks per day in additional to regular meals wouldn’t be too much (with 1-2 of those snacks being at night when we wake to pee)—it’s generally best not to go longer than 2-3 hours without some nourishment, including a serving of protein, in order to keep blood sugar happy and have the fuel to build blood volume, grow your uterus, and build an entire placenta, not to mention a baby.
With all this constant eating, it is super common to get sick of snacks we once loved and couldn’t get enough of! What works in first trimester might not work in third trimester, and vice versa, etc. etc.
SO, I am always working to brainstorm new snack ideas for the folks I support and for those who will lose their minds if they have to eat one more boiled egg…
Here is today’s creation!
Simple Tomatoes + Mozz
Couple handfuls of cherry/grape tomatoes, sliced in half—I like the multicolor/heirloom packs from Natural Grocer
High-quality salt, pepper, dried basil
Fresh basil, if you have it
Mozzarella cheese (the kind that comes in a ball or block in the deli section), cut into bite-sized cubes
Toss together, and enjoy!
The things I love about this recipe (if we can even call it that?) is that it is super simple, fast, and delicious—while also checking off a protein or fat serving (cheese) and a vitamin C serving (tomatoes).
A larger portion would make a great side, and you could even add greens and some balsamic with oil for a delicious salad.
